
Cornmeal Pancakes- 1 cup cornmeal
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup chopped nuts
- 1 cup flour
- 1/4 cup sugar
- 1/2 tsp. baking soda
- 2 eggs
- 1/4 cup oil
- 2 cups sour milk or buttermilk
Note, if you use sour milk, the batter will be runnier. The cornmeal likes to settle, so I give it a little stir with each dip into the batter.
